Charcoal Roasted Silver Needle – (白毫銀針, Bái Háo Yín Zhēn, "White Hair Silver Needle")
This tea, from Li Yanmei, a Fuding-based tea farmer and tea master, is produced from Fujian, the home of White Tea. Unlike many commercial varietals that focus more on appearance, this tea is focused on quality and authenticity. Harvested from single buds before they open in the early spring, this complex tea seems to give every drinker a unique experience, ranging from notes of apple or pear to lighter, more assertive flavors like mint. The buds of this tea are withered for several days in the shade to increase the withering time which enhances the floral aroma. The buds will then complete withering in the sun. The unique silver appearance of the leaves is due to a heavier presence of white tricomes, or tiny hairs, on the buds.
