Description

Tie Guan Yin (鐵觀音, Tiě Guān Yīn) — "Iron Guan Yin"

Grown in Anxi mountains of Fujian, this is a lightly oxidated version of one of China's most famous oolong teas. The new method allows the light floral flavor to emerge and, as such, has become more popular than the original version that was oxidized over charcoal. An unexpected find, this tea was discovered in an inn at the hot springs town of Anxi county where the innkeeper and her husband wither, dry, and process the tea themselves. 

Origin & Craftsmanship

  • Light oxidation using a withering and drying process 
  • Handcrafted by two innkeepers that dedicated a wing of their establishment to processing the tea

Brewing Instructions

  • Water Temperature: 175–205°F (80–96°C) 
  • Higher for more floral flavors
  • Lower for more grassy flavors
  • Steep Time: 2-10 sec per infusion
  • Tea-to-Water Ratio: 7g per 140ml (Gong Fu style)
  • Best Brewed In: Gaiwan or small teapot for multiple steeps
